Excellent dish. Love the veggies by themselves. I like to add mushrooms and black beans the next day to the veggies and have them wrapped in corn tortillas.

Quick Mexican inspired meal packs lots of flavor and few calories.


  • 4 servings chili powder
  • 3 servings frozen corn (1 1/2 cups)
  • 1 serving red bell pepper thinly sliced
  • 1/4 cup cilantro
  • 3 tsps olive
  • 1/4 cup lime
  • 1 poblano pepper thinly sliced
  • 1 small red onion (thinly sliced)
  • 1/3 cup light sour cream
  • 20 oz boneless salmon (4 – 5oz pieces)
  • 2 tsps cumin
  • 4 cloves garlic mashed


  1. Preheat oven to 425. Mist 2 large baking sheets with cooking spray. In a small baking dish, mix 1/2 of the lime juice, garlic, chili powder, cumin, and 1 tsp of olive oil. Add salmon and turn to coat. Let sit.
  2. In a medium bowl, toss corn, bell pepper, poblano pepper and onion with remaining olive oil. Transfer corn mixture to baking sheet, spread into a single layer.
  3. Remove salmon from marinade and arrange on other baking sheet. Drizzle salmon marinade over corn mixture. Season salmon and corn mixture with salt and pepper to taste roast for 8 to 10 minutes, until fish is just cooked through and vegetables are tender.
  4. Mix together sour cream, cilantro and remaining lime juice. Season with salt to taste. Spoon corn onto plates and add salmon. Drizzle sour cream sauce over fish.

  • 2-1/2 cups cubed peeled butternut squash
  • 1 large sweet potato, peeled and cubed
  • 3 medium carrots, sliced
  • 1 can coconut milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons reduced-fat sour cream
  • water


  • Place the squash, sweet potato and carrots in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 12-16 minutes or until tender. Cool slightly. Transfer to a food processor; add milk. Cover and process until smooth.
  • Transfer to a large saucepan; stir in the water to desired consistancy, salt and pepper. Cook and stir over low heat until heated through (do not boil). Top each serving with 1-1/2 teaspoons sour cream. Yield: 6 servings.

Shakeololgy 14 Day Challenge

On the 12th of this month we began a 14 day challenge with four ladies. I’m really excited that these ladies have decided to make the changes in their daily lives that they have.
The challenge consists of committing to drinking Shakeology for 14 days. Logging at least 10 workouts in Team Beachbody. Following a very detailed eating plan. Each of these has a success buddy that they check in with everyday. Each person is supposed to keep a journal throughout the challenge, so they can see the changes in their bodies. I can’t wait to see the changes in each one of these ladies.
I wish each of the ladies the best of luck and the willpower to continue through the challenge.

Hello to all of my friends!

Let me introduce myself:

My name is Tracy (ha ha most of you already know that). I have four beautiful daughters, 18, 17, 14, and 12. I also have three step-children 21, 14, 12. I have an amazing boyfriend that takes such good care of me. We live in Southern Utah and love to take advantage of the outdoors as much as we can. We love to go hiking, exploring, kayaking, climbing, camping, and anything else we can think of.

We have currently begun a journey as Beachbody coaches. I have personally used Beachbody products for a number of years (4 to be exact). I love P90X, and Turbo Jam. I have also used Slim in Six (great program btw). The nutrition supplements are some of the best that you can get. Activit and the Slimming Formula are wonderful! But, as far a supplements go, Shakeology has got to be the best! I absolutely love it! When I first began using Beachbody products (P90X, Activit, and the Slimming Formula) I saw my body make a total transformation. I lost 50 pounds that year, yes you read that right, 50 pounds! I know what my body is capable of now. Accomplishing that gave me the courage to move on to other things. I wanted to do more – hiking, backpacking, kayaking, and other such things. I found a new confidence that I had never had before. This gave me a new found freedom! Thank you Beachbody!

My goal now, is to give everyone that I can that same confidence and freedom that Beachbody has given me. I want to End the Trend of Obesity one person at a time. I want to make a difference in someone’s life, then I am a successful coach.
